There are so many places to have dinner in Hong Kong, but one of my favorites for creative Chinese cuisine is BO Innovation in Wan Chai. The chef has a punk rock vibe to him and he isn’t afraid to take risks. His tasting menu always has pleasant surprises. He puts a molecular spin on classic dishes such as xiao long bao. One of his signatures is a hairy crab soufflé with topped with an aged Jiangsu vinegar. An added bonus is that the cigar lounge is amazing in the open air of the city. —Mark Bright

Affordable Michelin-Starred Dining at Bo Innovation
I booked my late lunch reservation at Bo Innovation ages ago. The Michelin two-star restaurant — ranked #15 among Asian restaurants on The World’s 50 Best Restaurants list — features “X-treme Chinese Cuisine”. The maitre’d is confident and professional, falling just this side of superciliousness. He politely appears not to notice my dusty, practical walking sandals.
I’m in good company — surrounded by fellow foodies — I can tell because everyone is photographing their food.
