The flavors and textures are nothing short of fantastic. I’ve eaten a lot of sushi, and this place takes it to a new level of taste and innovation. Our party of eight, with a variety of dietary restrictions, just demolished the menu. Everything from the char-grilled shishito peppers to a half-dozen rolls ranging from the salmon nation to the lucky 13 was expertly prepared. Tempura was crisp and done to perfection. The mackerel house on fire was not only uniquely served, the flavors from the tiny alder smoker with lemon charcoal ring true. Everyone at the table raved/fought over every plate, so consensus was easily reached: best sushi, ever.

Bamboo Sushi: Great Sushi in Portland, OR

The sushi here is bam-tastic. Faulty pun aside, I went to the sushi bar, asked the chef what I should have and he gave me a roll filled with tempura asparagus topped with albacore tuna, avocado and aioli sauce. Delish. I also had the soft shell crab roll, which was equally as delicious (but not as good as the asparagus). Bamboo is also very dedicated to the sustainable quality of their fish and educate customers in their menu on this practice. PS it’s right beside Salt N Straw too!

A late night seat at the sushi bar at Bamboo Sushi in Portland, Oregon means you’re in for a lot of incredible food and conversation. The head chef at the Alberta location served us up a few samples and walked us through the menu for our first visit. The standout dish was the poké, which was the freshest and most flavorful salmon I’ve ever tasted. Everything that’s served at Bamboo is sustainably caught, so you’re getting the best quality you can find.
