Fine dining on St. Croix has been elevated to new heights in recent months with several exciting new restaurant openings in Christiansted. The most highly anticipated new entrant, balter, opened in April 2016 featuring the wizardry of young homegrown master chef Digby Stridiron, who also doubles as USVI Culinary Ambassador. Serving traditional West Indian favorites with unique and inventive twists, balter emphasizes fresh, local, and organic ingredients foraged and sourced throughout St. Croix’s vibrant local farming and fishing communities.
