On the Gulf side of the Overseas Highway, 13 tropical acres that once housed a pineapple plantation lead to one of the area’s most secluded white sand beaches. This is the setting for Baker’s Cay, which opened in late-2018 as the first Curio Collection hotel in Key Largo. The relatively hidden-away location lends itself to a more upscale Keys’ experience, as does the fresh, chic décor of the 200 suites, all of which feature private balconies, upgraded bedding, and eco-conscious amenities like custom Lather bath products that incorporate local honey and citrus fruits. Junior suites have separate living areas, while higher category suites boast things like dining rooms or wrap-around terraces. Stay active with offerings like snorkeling, watersports, beach yoga, volleyball tournaments, and catch-and-release fishing right off the dock, or just relax in the hammock-dotted garden, the vintage paperback-lined library, or the two pools—one of which has a waterfall grotto. (Off-site excursions like sea plane trips to a national park or snorkeling with coral restoration experts are also available.) Fresh seafood, regionally-sourced ingredients, and herbs from the resort’s farm power the dishes at the Caribbean-Creole Calusa restaurant, which looks out over the bay, as well as at the three bars: the firepit-fronted Dry Rocks, featuring live music and tequila / mezcal tastings; the Pool Bar and the lively Tiki Bar right off the basically-private beach.
