“Work hard,” says Hugo Ortega, “and people will give you a chance.” Ortega began working in restaurants as a dishwasher. Now, with three acclaimed restaurants, he still works hard—and for that, he has received James Beard nominations aplenty, and cooked for the Foundation several times. At Hugo’s, his gourmand pleasing menu extols Mexico’s interior recipes and street food traditions. Though vegetarian options are available, Ortega excels with meats and seafood; dishes such as pulpo (octopus) with chipotle tomatillo salsa, pollo asado with ancho sauce, and cabrito (goat) roasted to tender perfection with nopalitos define his offerings.
