In Saint-Saphorin, we had a wonderful lunch at Auberge de L'Onde where chef roaster Christophe Mazzieri excels at rotisserie racked delights like suckling pig and rack of lamb. We had the pleasure and honor of dining with the Auberge's sommelier Jerome Aké Béda—the Ivory Coast-born wine superstar who was featured in the March 2010 issue of AFAR. Jerome's passion for the region's wines (especially the Chassellas whites) is contagious and part of the reason his star is rising here and abroad. We chatted over some wines he had selected for us and he told us proudly that customers still come with copies of AFAR asking to be photographed with him in the places featured in the story. You don't have to receive a special invitation from the sommelier to enjoy the wines and food at Auberge. The menu has rotating dishes featuring locally sourced ingredients and every Sunday a local winemaker comes to the restaurant for a "home visit," bringing wines to share almost at cost.
