I visited St. Olaf College in Northfield, Minnesota, back in March, on what turned out to be the very last day of winter. Tuesday morning the ground was covered in snow, which struck me as particularly beautiful since we had only received a dusting back home in Nashville all winter. With a high in the 60s, however, all the snow turned to mud by mid-afternoon. That didn't stop some of the St. Olaf students from playing in it. They seemed glad for the chance to go outside wearing nothing but shorts.
While in Northfield, I stayed at the Archer House River Inn. Usually when I travel for work, I have to jet out of the hotel to catch a flight, but this time I had a few hours Wednesday morning to relax. I spent the morning at the inn's coffee shop, the Bittersweet Eatery, enjoying some incredible coffee and the pastry seen here. My visit to Northfield was indeed a little bittersweet, since I both found and lost the chance to experience a beautiful Minnesota winter. My popover was, on the other hand, nothing but sweet!
