Bún cha — a tableful of smoky, tangy, herbal, sweet
Bún chả, one of Hanoi’s most beloved dishes, involves a tableful of ingredients — smoky pork belly and grilled pork patties in a bowl of broth, a plate of diced fried spring rolls often with shrimp or crab, vermicelli noodles, a mountain of mixed greens including purple shiso, and bowls of pickles, garlic and chopped chili peppers. You assemble little bits of everything in a smaller bowl or just nibble from the individual dishes. It was the most expensive street food we came across, at about $12 for two servings, a beer and a coke.
