On a recent trip to Zambia, AFAR contributor Darrell Hartman and his brother, Oliver, shared a meal next to an unusual four-legged guest. Though hippos may not be much for dinner conversation, that didn’t stop the two from enjoying their stay at the Chongwe River House, a private, upscale home with a “Gaudí feel” situated along a quiet tributary of the Zambezi. The house was the first of many stops in the ten-day trip, where Darrell and Oliver explored the new brand of rugged luxury cropping up in safari lodges around the region.
