My idea of a good time is getting lost in the woods all so I can spend a few days finding my way home, but I can’t deny the allure of glamping – especially when it comes packaged up in the form of the Kings Canyon Wilderness Lodge, the Northern Territory’s answer to rustic chic. The luxury eco-cabins – fully heated and air conditioned – are wonderful, but there’s little reason to tuck yourself away inside when you can sip Aussie wine by the fire, or enjoy a gourmet meal under starry skies (or in the lodge restaurant on chilly winter nights). The last thing I expected to tuck into in the Outback was a spicy prawn curry, but I shouldn’t have been surprised – the Northern Territory has plenty of tricks up her sleeve.

There’s also a $6 million refresh of the lodge’s food service on tap, with new cafés and restaurants offering updated menus and Mad Men–era Mission 66-inspired design.

The natives that guide you through Canyon De Chelly are very passionate about their historical heritage: the battles that their people have survived, the ceremonies they live by, and the dwellings that they carved out of the massive cliff sides. The Navajo people had to hide in the mountains, and for extended times they weren’t even able to come down for food or water. Must-orders: For breakfast (served until 2 p.m.), opt for the desert classic Date Shake and Huevos Rancheros, made with California- and Coachella Valley–sourced ingredients. For dinner, try the Grilled Mahi Mahi Tacos or Desert Highway Burgers, and request the pickled jalapeños for added kick.
