Personally, I really like just walking around between flights.  There's always so much to see and do.  If you have more than 6 hours, you can actually take a tour of Amsterdam right from the airport.  They'll help you through security in and out, and keep your carry-on luggage for you.  But, if you're staying in the airport, I suggest you go on an "adventure" from one part of the terminal to the other.

Being able to spend the night in a jumbo jet hotel would be memorable. Check out the Jumbo Jet hotel at Arlanda Airport...

Grocery stores are fantastic for getting a few supplies before heading out. Duty Free shopping is pretty over-rated in my opinion.

I love when there are aviation museums at or near airports giving people on layovers something to do. It's wonderful when the airport authority organizes or allows outside organizations to offer tours to people on layovers.
