Yes! The Ashford (http://www.ashford.ie) and Dromoland (http://www.dromoland.ie/) castles. The most enjoyable bit was falconry. Absurdly, giggly, fun.

I stayed at Dromoland Castle in Ireland.  I really enjoyed the experience - walking the hallways and taking in the architecture, the beautiful grounds, and service.  The bar was formal but "happening" in late afternoon...lots of interesting people to talk to.

I stayed in the Castillo del Gibralforo overlooking Malaga, in Southern Spain. It's a historic castle on top of the mountain overlooking Malaga, which has been converted into a Parador (one the Spanish government-owned hotels). http://www.paradores-spain.com/spain/pmgibralfaro.html 


The views are amazing, there's a real Picasso in the restaurant (he is from Malaga of course), and the drive up to the top of the mountain to get to the hotel itself is pretty thrilling.

Stayed at Ballyseede Castle (Tralee, Ireland) last year. Not quite a castle, more of a manor house, but enjoyed novelty of it. My mother wanted to stay in a castle and we were satisfied.
