Hi Alexander!
Cambodia is one of my all time favorite places! The people are extremely kind! I don't know much about hiking (it was WAY too hot during the time I was there), but I can recommend visiting Koh Rong Island to get off the main tourist trail! Check out my post titled "How long can I stay" and "Secrets of the ocean after dark" to read more about it.
The great thing about Cambodia is that is very easy to get off the main trail pretty much anywhere. As long as you're adventurous enough, you simply have to hop on a motorbike and head out in any direction. The best experiences I had were either just heading out on a bike with no itenerary or by asking one of the locals to take me to their favorite spot. And if you're REALLY up for adventure - buy a bag of fried cockroaches from one of the street vendors and enjoy a local snack! :)
