where in Europe? Northern Europe: anti-practical. southern Europe: very practical.

Depends on what you mean by practical I suppose.  Weather wise, if you stick to south of Nice, France you should be in good shape for trekking Europe during the winter months.  Spain, southern Italy (Sicaly) and Greece should keep you occupied (and happy) until Spring!

I visited Europe in the winter but never backpacked there in the winter. I heard from friends that it's totally doable. It's probably very convenient in terms of hotels not being booked and skipping the big crowds.

I think you should consider that transportation might be a little delayed/canceled and walking outside could get really cold but other than that - Europe is magical during the winter.
