While in Nice, give the regional speciality Socca a try.
Rene Socca in the old town (near the modern art museum/place garibaldi) is probably the best place to go. Order outside, then head inside for a table and drink.

Add a commentin Brussels you can check out Chez Leon, which is a short walk from the Grand Place. The food is traditional Belgian and pretty good! They also brew their own beer so have a glass or two. If you're in to mussels then this is the place.

Add a commentand the local dish in the country is french fries, but called 'pommes frites over here. you get those and then they ask "quel sauce?". mayonnaise is the favorite but there are many more like picant (hot), pita, americain and so on. one of the best friteries is located on the side of the Bourse, which is also a short walk (2 blocks or so) the Grand Place, which isn't far from the central train station. while there, you can also check out Falstaff, which is on the same street and also serve Belgian food. the main reason for going there is the decor though, which is in the belle epoque style.

Moeder's in the Jordaan has outstanding, reasonably priced Dutch food with a modern twist. On nice days, the outdoor patio is always full. There's our nat'l dish, stamppot (potatoes mashed up w/ a root veggie, topped w/ a sausage + gravy), but hey, order the ribs...they're to die for!
