Heading to Morocco in October 2011. Fez, hiking in the High Atlas, desert adventure, and Marrakesch. Any suggestions for places to stay, eat, or visit? Unique, off the beaten path, suprising? And stops along the routes between these places.

Al Fassia is my favorite restaurant restaurant (stalls I count as something different) in Marrakech. And it's run entirely by women.

Chefchaouen! Best part of my trip to Morocco. Three hours north of Fez, which was also awesome. I felt that Marrakesh was overrun and had seen better days. But if you do go here's a great article with places to check out: http://www.budgettravel.com/feature/my-marrakech-is-better-than-yours,2812/

Check out the Dar Najat in Marrakech. We stayed there for a few nights while in Morocco and loved it.

If you have time, the Sahara is magical.  I recommend Zagora, but Merzouga is closer to Fez.

We stayed in the Palais Jamais in Fez. Try to get a reservation at Yacout in Marrakech. Try to get tot the Handicraft Museum in Marrakech before you buy anything: you'll get a clear idea of quality.

Hike the Todra gorge if you're in the area, and watch the rock climbers at work.

We had a wonderful stay in Marrakech at a place called Riad Kaiss. It is romantic, great location and has wonderful rooms all different and beautifully appointed. If you can ask for the room at the top with the balcony.

I second Chefchaouen!  I stayed at Dar Meziana http://www.darmezianahotel.com/ which was beautiful, and (I thought) a great deal.  I hired a guide to take me hiking up in the mountains, which meant I got six hours to ask all the questions I wanted.  Invaluable.  I also paid to have a private hamam (bath) in the hotel.  It's not the real communal experience, but it was luscious.

Well, until a few days ago, I would have told you to eat at Argana in Marrakech, but I think we all know what happened there.  It is unfortunate it is a great little restaurant.  If you get to Agadir on the coast I would suggest trying Le Fluer.
