Heading to Granada, Nicaragua in early July. Any suggestions would be greatly appreciated.

Spend some time on Lake Nicaragua. There's a good entry point just about 10 minutes from Granada. There are some outfitters that do tours around the islets of Nicaragua. These are really interesting. Legend has it that tons of the little islets around Lake Nicaragua were a result of nearby Mombacho Volcano exploding. You can also rent kayaks to putz around Lake Nicaragua. I love the volcanos of the area. At Mombacho you can go ziplining through the rainforest on the side of the volcano. At Masaya Volcano (The town of Masaya is a good day trip for walking around and doing some shopping at the open-air market), you can go up to the top of the volcano and actually walk around the rim and look down into the crater. You can see more of what I wrote about the volcanoes of the area on my blog:
For a good 360-degree view and photo, there's Iglesia la Merced in the middle of Granada, which allows you to go up to the top of the bell tower for a view of Granada and the surrounding area.
