Savor the spicy chicken noodles
Guizhou food. It's similar to Sichuan cuisine, but also incorporates local cooking traditions, including those of the many minority groups in the province. In general, it's just as la (spicy / 辣), but less ma (numbing / 麻). One of the best bowls of noodles I've had in Zunyi are the spicy chicken rice noodles, which are a specialty of a nearby village. The noodles (mipi, literally rice skin) are a soft and silky Chinese pasta. There's plenty of spice, the chicken is tender, and the sour cabbage topping makes for a perfectly balanced but intense flavor. Each bowl is served with a piping hot bowl of chicken broth, made each day and fresh as fresh can be.
