I went to Australia a couple of years back on a conference, which meant that unfortunately I didn't get much free time. They did, however, organize a couple of getaways, one of which was to the Tobruk Sheep Station. This experience was one of the best that we had, mostly due to the friendly staff and the uniqueness of the experience itself (albeit rather touristy).
There are a variety of outback experiences that you get to see and do, including whip lessons, boomerang training, sheep shearing, and mustering. The program includes lots of Australian food during the day as well. I highly recommend this place if you're traveling with kids or a large group; it's very entertaining and exciting. They also have super good billy tea and damper!
