Stone says the Olsen has a ton of character as it boasts a great collection of artwork by revered Australian landscape artist, Dr. John Olsen. Each of the 229 suites is decorated with prints of his work. The hotel’s restaurant, Spoonbill, describes its menu as "paddock-to-plate" and is influenced by Dr. Olsen’s travels through the Mediterranean. One of the artist’s favorite dishes, paella, is a menu staple.
