The downtown lunch bunch of El Paso stays fit at the Green Ingredient, hidden in a nook in the Chase Building. Serving breakfast and lunch, the tiny eatery devotes its menu to raw food, vegan dishes, and vegetable-focused recipes. While some meat is served, the owners keep it non-GMO, and cater to customers who want their creamy mounds of cheese dairy-free, and made from nuts. The always-popular black bean burger reigns, as does the avocado chocolate mousse—a tower of gooey delight, balanced on a crispy cookie.
