I cook for a living -- so vacations are all about tasting someone else's food and staying out of the kitchen. But in 2009 when the world was going nowhere fast, I went to Siem Reap and taught a cooking class at Shinta Mani, a hotel/restaurant cum school of cooking and hotel skills started to train young Cambodians to run their very profitable tourism businesses near Angkor Wat in the 21st century. Expanded and reopened in 2011, the new Shinta Mani offers visitors to Siem Reap the opportunity to give back in so many amazing ways. A vacation will never be the same.
