David Chang's tiny restaurant is a hot draw for Sydneysiders. It's well worth braving the casino crowd for the 12-course tasting menu, which might include smoked eel and apple, pork belly buns, and short ribs with daikon and turnip—plus a trio of desserts. Sit at the bar for a front-row view of the action (not unlike watching an air traffic controller line up planes on the runway).
