Raleigh Marriott Sells Chef Salerno's Tasty BBQ Sauces
At the Raleigh Marriott Crabtree Valley, Chef Ron Salerno and his team have created a signature line of sauces and rib rubs. So many diners enjoyed the chef's unique sauces, they became a popular gift shop item. Salerno says, "Guests try our BBQ chicken, pulled pork sandwich, hickory smoked BBQ ribs, and Spiced Chips dishes in the restaurant and they always request the recipes so they can replicate them at home. As a result, we keep making new batches of our products to sell in the gift shop and we're having a difficult time keeping them in stock."
Those who cannot visit Raleigh may order the sauces by special request. Chef Salerno adds, "The Eastern Carolina style pulled pork BBQ was introduced to me here when I moved from New York about 12 years ago, but the western style sauces I had been making for many years before."
BBQ Spice is a blend of 11 spices including brown sugar, paprika, ground pepper, cumin, dry mustard, and onion and garlic powder. The Sweet & Spicy BBQ Sauce is a classic tomato based sauce with molasses and chipotle pepper, and the Carolina BBQ Sauce is a classic Carolina-style apple cider vinegar based sauce.
While visiting Raleigh, be sure to tour the North Carolina Museum of History, with its exhibits on the Civil War era, Civil Rights Movement, and state Sports Hall of Fame. Raleigh's downtown is ideal for walking, and there are chic taverns, boutiques, and cuisine choices at every turn.
