Nestled high in Italy’s Carnian Alps, the Prosciuttifico Wolf Sauris has been producing hams since 1862. Inside the barnlike factory, their trademark prosciutto di Sauris is smoked using a combination of wood and herbs, including maple, fir, chestnut, juniper, sage, and rosemary. Then, for the curing process, the hams are hung in endless rows from floor to ceiling. The result is a prosciutto that is delicately sweet with just a hint of smoky flavor. Although guided visits of the factory are offered for groups only, individuals may be allowed to tag along, so check in advance for their tour schedule.
