Fry bread isn't really intended to be a complete meal—it's typically served as a side—but one bite of this puffy, slightly sweet, warm bread (somewhat akin to naan) and it's easy to understand how it often holds its own as breakfast. While fry bread, or fry jack, is served all over Belize, Colu's favorite was at Pop's, a down-home, diner-type spot in San Ignacio that serves breakfast all day long. Pop's also cooks up excellent pancakes and egg dishes, but the fry bread, a legacy of Maya culture, is really where it's at here. Whatever you order, wash it down with a “bottomless” cup of coffee.
