I just got back from Marfa, Texas and I can't stop thinking about this pizza. It's a problem. I mean I lived in New York where you have access to some pretty amazing pizza. It's been almost a week and I still can't get the margherita pizza from Pizza Foundation out of my head.
Only open from Friday to Sunday between 1:00pm and around 8:30pm you have a small window of opportunity to take advantage of their delicious pies. It's embarrasing to admit but I went here five times in one weekend. The wait for a pizza can be up to 90 minutes so your best bet is to call in your order and they will call you and pick it up when it's almost ready. Last orders are taken depending on the wait time so if you want to be guaranteed your order call before 8pm.
You can take your order to go or sit outside and take in the smells and sounds of Marfa.
The fact that this tiny town of around 2,000 people has a pizza joint this delicious is surprising, but hey I won't complain. It's thin crust pizza baked right in the oven with the freshest and mostly local ingredients. I love love love the margherita pizza but you really can't go wrong with anything you order.
They have a greek salad too that is a perfect starter when there is a long wait.
So if you're driving through Texas and near the town of Marfa make sure you stop at Pizza Foundation and be sure to take in a bit of the local art scene while your there.
