The Japanese omelette is truly an art form. At our hotel in Noboribetsu, we were in awe as we stood by and watched the chef create his masterpiece.
He started by pouring the egg mixture into a square pan. He spread out the mixture and as the egg hardened, he flipped it in the pan a few times to make the square omelette fold into a rectangular shape. He then poured in more mixture (with the cooked omelette still in the pan) and repeated the process, folding the new mixture onto the cooked one. And so on and so forth.
All done very neatly and very precise. And the finished product looked too good to eat!
