No.au is a collaborative effort from two brewers (Teo Musso and Leonardo di Vincenzo), a celebrity baker (Gabriele Bonci), and two long-term fixtures in Rome’s beverage business (Luca Tosato and Paolo Bertani). If you can look past the silly name (noau is the Italianized phonetic spelling of “Know How”, to which the acronym Naturale Organico Alimento Umano has been forcibly ascribed), you will be treated to amazingly friendly service and one of the best craft beer and natural wine selections in central Rome.
The staff is exceptionally helpful when making selections, which range from locally produced oyster stout to Italian wines made with indigenous yeast to organic Belgian sour ales. Whether you are after a Prosecco “Colfondo” or a complex Gueuze, no.au has what you are looking for.
There is also a small food menu, including bar snacks, cheese plates, and lots of steak tartare—I love the raw meat on a plate, but find the raw meat wads on a bun a bit too, well, raw.
