I had the great fortune to meet Jamie Montgomery and Steve Bridges at their dairy in Somerset, England and to partake in the monthly cheese grading. Montgomery Cheddar is known world wide as some of the best cheddar cheese in the world. This is due in no small part to the fact that Jamie insists on using only traditional methods of producing a product of exceptional quality. They control every aspect from the grass to the cows to the heirloom cultures they use as starters. Jamie is the first to admit, however, that no matter how much they try, they are still at the mercy of a myriad of uncontrollable forces that give a variety of differences to the cheese every day. But, he says, that is the beauty of it all.
