My pick for the best cafe in Seattle, Macrina Bakery's headquarters in SoDo, has one of the coolest features I've ever seen: two giant glass windows that let you look into the kitchen and watch the show.
Macrina's workers operate at a nonstop, breakneck pace, and that kind of energy can be contagious. The table in this picture is lined with workers on both sides, and they flour and flatten dough in a rhythmic criss-crossing assembly line. They throw the dough to each other from one side to the other in a perfectly coordinated fashion.
Besides the show, Macrina has the best bread in the city. Get there early and buy a loaf fresh from the oven, the smell will fill your car on the way home.
