Aruni Restoran and Bar is a unique dining experience belonging to Lugal, A Luxury Collection Hotel in Ankara. Each week, the menu features regional and historical cuisine from Turkey. Chef Zeki Acikoz, President of the Turkish Culinary Federation, works with a food historian based in Hatay, who researches the fare eaten nearly 2,000 years ago in the Anatolian region. Chef Zeki then creates menus based on these ancient food items with passion and a deep love for Turkish cuisine. This particular item, Simsarmak, was featured during the week of the Seljuk Empire (10th century) menu. Slices of spicy liver rest atop tangy eggplant with a side of crispy onions. The presentation of each dish is meticulously put together with a great attention to detail. A few examples of other dishes served include Söğülme- goose tandoor, Borani- a mix of spinach, sorrel and mallow topped with a quail egg, and a decadent dessert of sliced apples wrapped with phyllo surrounded by a moat of caramel and topped with the Seljuk 8-point star.
