An open-boat expedition to the mussel farms of Havsten Fjord is a highlight of the shellfish season along Sweden's western coast. The tours are part history lesson, part sustainability lecture, and 100% delicious.
On our tour with Janne Erik Bark on his boat, the M/S Marta, we saw where and how mussel farms are placed to take best advantage of the cool, clear waters of the fjord. We watched the skipper gather the mussels, and on the return journey, we helped clean them.
Back on land, the mussels were cooked with white wine, onions and parsley; and served with freshly baked bread and homemade aioli. The setting--family-style service with a sunset view of the fjord and a glass of Riesling--was every bit as good as the meal!
