When you hear the name Jack Daniels’ Bar & Grill, you think of a chain restaurant, right ?
Well you (and me), we are wrong. So wrong. The only one of its kind is in Lake Charles, Louisiana in the L’Auberge Casino Resort. So then you might ask yourself, " Is this going to be a corporate restaurant with corporate food?" And we'd be wrong again.
Executive Chef Lyle Broussard, born and raised in the area, brings his passion and love of home-style Cajun food to his restaurant. And believe me it is his.
L' Auberge Casino Resort is very smart in that they allow Chef Lyle do what he does best: from designing the menu items, creating in the kitchen with a hand-picked staff, and bringing the best to the table.
Dinner began with a rich gumbo. Chef explained that when he was a child he would watch his mother preparing roux for the gumbo that would take hours to prepare. Then he would stand on a little stool and stick his finger in it to taste it, because it looked like chocolate to him; dark and rich. And even though it wasn’t the chocolate he had hoped for, his love affair with cooking had begun.
Chef Broussard‘s love of his local heritage carries over to the menu with authenticity, deep flavors and a simplicity that allows the ingredients do the talking. My advice? Order any seafood item along with the “must have” seafood Gumbo. And as the menu states “We dare you not to share” so grab the gang and share multiple plates. Yummy!
