This might sound like a travesty but... If you're ever in Paris, run—don't walk—to l'As de Falafel, in the city's Jewish corner nestled in the Marais, for one of these bad boys. Marinated eggplant, hummus, hot sauce, tahini, sliced cabbage and umami-rich falafels folded into a pliable, pillowy pita. Preferably eaten standing, in the cobbled street, shamelessly dripping sauce everywhere. A lesser known but deeply soul-satisfying Parisian tradition. Closed Saturdays.
