When my sister- who eats gluten free- came to visit Madrid I was determined to make sure she got to experience the magic of Madrid tapas while sticking to her gluten freeness. After tons of research (aka eating a whole bunch of not-so-awesome gluten free tapas) I found La Concha.
Located in the heart of Madrid's tapa-heaven (Calle Cava Baja in La Latina), La Concha understands gluten free. They have a separate gluten free menu (in both English and Spanish) and have managed to capture the soul of Spanish tapas while keeping them 100 percent gluten free. We tried seared squid in a black squid ink sauce with rice and a tosta made on surprisingly delicious gluten free bread topped with orange slices and cured duck leg. The wait staff is fantastic, the food is superb and the location is ideal.
