Kukai Ramen and Izakaya's home base is Tokyo, where it is a well known chain. The location in Bellevue is the first in the U.S. Charmed by the friendly waitstaff, I decided to try sake for the first time and went with their choice on the matter. Served cold (and with an explanation of the nuances of this sake) it was refreshing and definitely something I would experience again.
I ordered the tonkotsu ramen because of all the reviews and suggestions I had read online. I also followed the advice to get extra wood ear mushrooms and a soft-boiled egg but skipping the low sodium option. Best decision ever. The broth was flavorful and the yolk spilled out into the noodles, adding a unique richness to the soup. I'm in love.
