Fermentation tanks, offices, restrooms, everything. All production and administration happens in the 45,000 square feet tunneled under the Vaca mountain range. A naturally occurring stream creates a waterfall and rambles through the caves. Bring a sweater for your tasting, which will—you guessed—take place underground.
