Hôtel Ligaro is one of those chic-but-cozy little hotels that you just don't want to leave. It's run by a delightful Irish woman who's married to a French chef (his Restaurant du Chateau is quite good, too). The buildings are hundreds of years old, but the interiors are completely redone. This is the breakfast room here, where I personally scarfed enough warn croissants, cheese and charcuterie that I really shouldn't have eaten anything else the rest of the day (but did, of course - it's France!). As a bonus, the hotel is within staggering distance from the Courvoisier chateau. TIP: Ask for the room with the bathtub and its own private deck.
