An excellent place to sample Nicaragua’s traditional cuisine is the colonial city of Granada. Here, the streets are lined with lively restaurants dishing up local specialties like vigoron (a spicy marinated cabbage salad with boiled yucca and crisp-fried chicharrónes, or pork rinds) and nacatamales (meat-and-vegetable- filled corn tamales, steamed inside a banana leaf). The city squares also offer plenty of vendors serving fritangas (street-food snacks).
