When it was time for lunch during my stay at Gansevoort Turks+Caicos I stepped two paces off the sandy beach to sit down for a meal of grilled snapper on a bed of couscous. The resort's new executive chef Mahdi Eghnam is incorporating Mediterranean flavors of his native Tunisia to the menus at this spot on Grace Bay. After my plate was clean I put my fork down, my swim goggles on, and went back into the waves.
