Such is the opinion of Lou Lambert, creator of award-winning Texas restaurants like Lambert’s Downtown Barbecue Austin and Dutch’s Hamburgers in Fort Worth. For one weekend way out west each year, the chef leads a small, intimate gathering in a course of cooking (and enjoying) the ranch-style meals he grew up preparing with his family. Set in Marfa, El Cosmico’s austerely magical grounds add to the weekend’s appeal and help guests conjure up creative combinations. Space is limited, so this is a trek you’ll want to plan well in advance.
