Housed in an historic 500 year old building, Dibek stays true to tradition. The menu might not be extensive, but every item is prepared with care. The cozy atmosphere is enhanced by the friendliness of the family who runs it, who will gladly explain the antique decor and take you on a tour of the wine cellar. Plan to stay awhile, lounging on cushions on the floor around your table, enjoying some pickled items for starters and a bottle of local wine. You can't go wrong when ordering, whether you choose manti, guvec, kurufasulye, testi kebab, or something else, but be sure to save a little room for dessert. You might find yourself returning several evenings in a row. Dibek is not just a place to eat dinner, it's a complete experience, and my personal favorite locale in all of Cappadocia.
