Aside from Michelin starred restaurants and danishes I sadly knew little about Danish cuisine. One of the best ways to learn about a culture is in the kitchen so on my recent trip to Copenhagen I took a class with Mia of CPH Good Food to find out what Nordic cuisine is all about. Rather than cook strictly by recipes Mia encourages you to cook by feel and intuition. Her kitchen, stocked with traditional and unique Danish vinegars, cheeses and seasonal produce was a warm and inviting classroom. Several kinds of bread, pork cheeks braised in a local beer brewed from hay and a surprisingly light barley salad were my introduction to the flavors of Scandinavia. Mia's welcoming nature and expertise make CPH Good Food a top experience for any foodie visiting Copenhagen.
