No one will call you out quicker on a lack of authenticity or quality than barbecue fans, and many spots have tried of late, with mixed results, to pull off what County does—it’s stylish enough for a weekend night out (the craft beer, bourbon and cocktails list is extensive) without losing one bit of its slow-cooked meat credibility. That slow-cooked meat? It’s very, very good.
County does the barbecue staples wonderfully. The ribs and rib tips, the burnt ends and the pulled pork sandwich are all outstanding. The sides—like the corn pudding, cheddar grits and fried green tomatoes—elevate the old favorites without tinkering too much with a good thing.
