Every trip home to Tennessee calls for a visit to Chef's Market. Not ONLY for dessert, but for the delicious salads, savory meats, and gourmet vegetable dishes on the menu. But I will be honest with you. It is MOSTLY for this cake.
Chef's Market makes THE BEST carrot cake known to man. That is a bold statement, I realize, and it probably offends a grandmother or two. However, I am being honest, remember?
The homemade cake is chock full of pecans, dried fruits, and finely grated carrot. Each moist layer is nestled between not-to-sweet cream cheese frosting. It is hearty yet not too heavy, rich but not excessive, decadent but not overly sugary.
