The winery has worked towards a zero carbon footprint, for the earth, but also for the grapes vines and olive trees. There is a deep seated dedication for quality that takes into account how humans impact the environment, and shape the air and soil for the plants that grow there. Call ahead to make sure the winery can welcome your party (excellent English is spoken). Take a jeep (solar battery powered) ride through the vines and ask about the history of the vineyard, admire the castle where the gracious owner lives (and whose family has lived for generations), tour the cantina, and sample the products. Attention is given towards pairing their wines with local foods, like the parmesan-like cheese from Todi. Their olive oil drenched bruschetta was a thing of beauty. And the space feels like thoughtful, warm, and passionate to detail.
