Inside the small shop next to the Casa Perleta hotel, a man fries hundreds of Moroccan donuts known as sfenj -- or Moroccan beignets. Early in the morning, the locals of Chefchaouen line up to wait for their personal delivery of the best donuts in town. The line can be 3 to 4 people deep up to about 20. Men and women from the nearby hotels, riads, and dars wait patiently for their allocation, joking and talking quietly in anticipation of their box of sfenj.
If you are coming to get just one or two of your own you can skip the line. Just pass your money forward and let the people in line know how many you want. Change is passed back to you like in a stadium. Then, the hot, fresh donuts are passed back. The light, fluffy, hot fried treat is best enjoyed right there on the street.
This shop is located 100 m up the street from the Bab Souk gate entering the medina in Chefchaouen. Or just ask for Casa Perleta -- it's next door.
