The tradition of breaking whole flower hop bales by brewmasters searching for just the right characteristics with finely-tuned noses is the inspiration for this hop-forward, craft brewery. Located in the middle of Yakima Valley's many hop fields should give visitors the first hint of what's going on here. It's all about the flowers from the fragrant vines that drive the profiles of the craft beer being brewed. The physical plant is a “one-off” in the sense that you won’t find another brewery in North America located in the middle of a hop field, in the middle of one of the world’s largest hop producing areas. The brewery plays host to local food cart and trucks, adding local culinary fare to the beer offerings. You’ll always find a variety of hop-centric styles of beer available in their on-site taproom - the Baling Room. Facility tours are also available to give guests an intimate look at the relationship between ingredients and final product. Being out in the hop fields and experiencing the land supporting the enterprise is one way to truly appreciate the craft brewing process. Owners Meghann & Kevin Quinn and Kevin Smith share a commitment to producing quality beer with fresh, sustainable ingredients and practices to insure drinking pleasure in every glass. They also have beer-to-go of the growler variety or choose cans of Topcutter IPA and Field 41 Pale Ale. Either way, you win!
