Corn Island, just off the Atlantic coast of Nicaragua (and a short flight from Managua with La Costeña airline), is one of the few Caribbean paradises that is still largely "undiscovered" (though I'd bet that's going to change soon).
One of the best hotels on the island is Arenas Beach Hotel. It's on a gorgeous stretch of beach with transparent, swimming-pool-calm water. There's the main building of the hotel, as well as a few cabañas with several individual rooms each. The cabañas all have large porches with hammocks, tables, and chairs, perfect for getting out of the sun and relaxing - or for taking refuge from the rain if you travel during rainy season, as I did! In front of the main building, there's a large outdoor patio where breakfast, lunch, and dinner are served. The food is delicious and reasonably priced. Cross the dirt road in front of the hotel and you're on the beach. There's a large covered gazebo right on the beach where guests can rest on cushions if they don't want to sunbathe, or have a drink at night while they enjoy the ocean breeze.
